Feta Stuffed Tomatoes













4 medium to large tomatoes - not so ripe
4 oz crumbled feta cheese
1/4 cup dry bread crumbs
2 TBSP parsley
2 TBSP olive oil
Cut tomatoes in half and scoop out pulp, discard seeds, and coursely chop. Stir together tomato pulp and all other ingredients. Spoon mixture into tomato halves and top with some bread crumbs.
Bake 350 degrees for 15 minutes. To brown top, turn oven to broil for 3 minutes or until tops are golden brown.
