1 lb shrimp - peeled and chopped
1/2 cup frozen green peas
1/2 cup chopped carrots
2 cups cooked rice
1 large onion - chopped
3 TBSP butter
1/4 cup teriyaki
2 eggs
salt
pepper
Cook rice and set aside to cool. Thaw peas, chop carrots, chop onions. In a large skillet or wok, melt
1 TBSP butter on high. Add onions and cook until translucent. Next add peas and carrots. Cook on medium about 5 minutes. Add remaining butter and then rice to pan. Add one egg at a time, stirring quickly until it is fried. Add teriyaki, salt and pepper. Cook on low heat.
In separate small pan, cook shrimp with olive oil and teriyaki or soy sauce. Add to fried rice and serve.
