Blue Cheese and Bacon Ravioli
  

8 strips of bacon - chopped
1/2 cup blue cheese
1 Tsp minced garlic
2 Tsp butter
1 medium onion - chopped
1 zucchini - chopped in quarters
1 yellow squash - chopped in quarters
1/2 cup green olives (with juice)
salt & pepper - to taste
1/4 cup white wine (optional)

1 package of cheese ravioli or tortelleni

* In skillet melt butter and brown garlic until it smells nutty.
* Add bacon and cook on medium to high until edges brown.
* Add onions and cook until translucent.
* Turn heat to medium-low and add green olives (with juice), zucchini, and squash.
* Stir in blue cheese until melted and it forms a sauce. Simmer on low until served.

Boil pasta in a separate pot. I've made this dish with any kind of pasta and it all turns out well - even plain noodles.  Begin boiling pasta when you add the onion to your main mixture.  Drain pasta and then serve.
